Density per hectare: 5.000 strains
Yield per hectare: 5 tons
Vine training system: Cordon trained.
Vinification: Grapes are manually collected with a double sorting of the bunches in the field and in the cellar. They are then introduced into steel tanks through gravity and vinified at a controlled temperature of 25°C. Here, for a period varying from fifteen to twenty days, the alcoholic fermentation and the maceration of the skins take place, during which are carried out only gentle punch-downs. After malolactic fermentation in steel, a period of
ageing in wood follows.
Maturation and ageing: Eighteen months period in French oak barrels of first and second passage followed
Tasting notes: Solid and deep, like the roots of Villa Bibbiani in the Tuscan land, Montereggi IGT has a very intense ruby red colour. A complex nose of spices combined with hints of roasted coffee and cocoa. In the mouth, it is pervasive and gives long lasting flavours, with silky and vibrant tannins. With great personality and high potential for ageing, it is a genuine expression of a Cabernet Sauvignon that has found its perfect home in the Tuscan hills.
