At Villa Bibbiani, the cold doesn’t catch us unprepared – since the design phase in the early nineteenth century, the ancient rooms used for the cellar were supplied with heating. The Marquis Cosimo Ridolfi, master agronomist and owner of Villa Bibbiani, had equipped the structure with systems for controlling and regulating the temperature. This is just one of the many reasons why 150 years ago the cellar was considered an avant-garde structure.
The current renovation has kept traces of Cosimo Ridolfi’s works and today, these systems have been integrated with innovative machinery that allows the latest generation of winemaking techniques.
