In the Villa Bibbiani estate there are five thousand olive trees that are used for the production of a very fine Tuscan extra virgin olive oil. On top of the five thousand olive trees, we also include olives collected from two thousand specimens present in Vinci. Every year, based on the quality of the fruit we choose, only the best plants give life to our oil.
The plants are from the Leccino, Moraiolo and Frantoio varieties. These plants are typical cultivars of the area, widespread especially in Tuscany and central Italy: the leccino has a ripe fruity olive flavor and vegetable aromas and the moraiolo has an intense fruity aroma with vegetal notes. The oil mill adds a complex and elegant ensemble to the final product, with tones that bring back thistle and artichoke on a dry almond scent.
